Find a storeroom that meets the requirements of regulatory authorities. Remember that it must have the necessary capacities - especially this reminder is relevant if you plan to make a mini-bakery at the store. Most types of baking equipment - dough mixers, dough dividers, refrigeration and heating equipment - consume quite a lot of electricity. And the acquisition of additional capacities is an overhead affair.

Make the necessary repairs in the room where you intend to trade in bread. The design of the hall is better not to overload with unnecessary details. In such places, wood, wicker elements (for example, high bread baskets, etc.) look good. Give preference to fill lighting. Remember that for all materials used in construction work, you must have certificates of conformity.

Get trading equipment. If you wish, you can choose the wall-mounted placement of counters. As an option, consider the parietal-island arrangement. Ideally, breadcases should have a separate highlight. Do not forget about the cash register equipment, as well as storage and equipment for other utility rooms. In order for a store selling bread to make a profit, it’s not worth saving on equipment.

Develop an assortment list of products that you intend to trade. There are two ways to develop. Or first select suppliers offering the most favorable conditions for you, and then make an assortment of their products. Or, give preference to a region (for example, Austria or France) and look for mini-bakeries offering Austrian or French authentic bread.

Think, perhaps, you have enough resources to place a small production in your store. Then you should choose whether it will be a production baking bread from frozen semi-finished products or a full cycle. In the first case, you can put the stove right in the hall. The second option will require the allocation of several additional rooms.

Debug the trading process. Make a staff list, hire staff, conduct sales training with sellers and other employees of the contact zone. Take the rules of the basic principles of the successful sale of bread: before being taken to the trading floor, all products are subjected to marriage; no loaf should remain for tomorrow; after 19 hours, a discount on bread - 30-50 percent.
