From a chemistry point of view, sugar is one of many substances in the group of instant carbohydrate compounds. But in human life this word has a very definite meaning, it is sucrose - a sweetener made from sugar beets or from sugar cane. Refined sugar has a white color, while brown ones are simply not completely refined. The fact is that the vegetable juice enveloping the crystals - molasses - has a brownish color. If sugar crystals are not removed from molasses, it remains brown. You can get sugar in various ways, including from sugar beets.

Since sugar beets are a perishable product, plants are usually located close to the fields where they are grown. An additional argument in favor of the proximity is the fact that to produce 1 kg of sugar requires about 6 kg of sugar beets, and it is very expensive to transport such large volumes. Beets collected from the fields are fed to production lines, at the very beginning it is cleaned of impurities: straw, sand, stones, tops. Water is used for this, air is supplied to intensify cleaning.

After the initial cleaning of the sugar beet root crops, it enters the washer. Water is poured into it in an amount equal to the mass of beets, or slightly less, it depends on the degree of contamination of root crops. After that, the beets are rinsed and fed to an electromagnet, with the help of which metal objects accidentally falling into the mass of fruits are extracted.

Next, the beets need to be weighed. Used electric scales associated with a device for cutting it. Carefully measured, beetroot mass is sliced, it is crushed to shavings.

Beet chips fall onto a conveyor belt, which is also equipped with scales. According to it, it follows into a diffusion installation. Countercurrent diffusion allows sugar to be extracted from beet juice. Chips poorly saturated with sugar (called pulp) come out of the unit, as well as diffusion sugar juice. The pulp is pressed, dried, and then briquettes are formed from it, they are used as animal feed.

Diffusion juice with the help of adsorbing substances is purified from impurities and various dyes. He undergoes complex multi-stage filtration procedures - several saturations.

Filtered syrup is fed into a vacuum apparatus, where it is boiled to a state of supersaturation, in which all substances crystallize. The output is the so-called massecuite, in which approximately 55% of the total mass is crystallized sugar.

The massecuite is fed into the massecuite machine, where sugar crystals are separated from impurities first in a centrifuge, then washed with hot water for further purification. Part of the sugar is dissolved in water, which is subjected to further purification and processing. It is at this stage that molasses separates, which makes sugar brown. Cane sugar, which undergoes the same processing steps in production, is subjected to additional refining procedures at this stage, but the beetroot product does not need such treatment.

The poured sugar is additionally whitened first with water, then with steam. It has a temperature of about 70 degrees. The crystals pass through a vibrating conveyor, then a weight conveyor belt, and then fall onto a vibrating screen. The lumps from it are returned for processing, and the sifted small crystals, in fact, are the final product.
