On the Internet you can find many programs that calculate the costing of dishes for catering. However, automated calculation is not always convenient. For example, in the case where you need to demonstrate the costing of dishes to the cafe management for signature and approval. To do this, fill out the calculation card (form OP-1), which can also be easily downloaded online.

Filling in the columns of the card will not be difficult if you have already worked out the recipe, you know the norms of consumption of raw materials and current purchase prices for products. However, when you need to calculate the costing of dishes on a new menu, you have to act differently. You will need to collect the following information:

• List of products used;

• The consumption of each product per 100 servings of the dish (in fact, you can do with a much smaller number of trial servings, but hereinafter we will proceed from the calculation of 100 pieces);

• The price at which each product is purchased.

When the information is on hand, make a table in which indicate the list of all products, their consumption rates for 100 dishes and their price. For this, it is convenient to use Excel spreadsheets, especially since you will need to calculate the cost of 1 dish further by multiplying the cost norms of each product by the price and dividing the resulting number by 100.

Having received the cost, you can calculate the costing of dishes, adding an extra charge. Thus, you will receive the sale price of one dish. Record the calculation in the calculation card.
